  • 1.52 pounds ribeye steak (trimmed and cubed)
  • 5 tablespoons butter
  • 2 teaspoons minced garlic
  • 1/2 cup diced yellow onion
  • 1 cup sliced carrots
  • 1 cup sliced celery
  • 1 cup sliced baby bella mushrooms
  • 1/2 cup cubed russet potatoes
  • 34 cups beef broth
  • 1 tablespoon tomato paste
  • 1 cup frozen peas

Instructions

  1. Trim fat from ribeye steak and cube into bite-sized pieces. Season with salt and pepper.
  2. Heat Dutch oven over medium-high heat; melt 2 tablespoons of butter. Sear beef until browned on all sides, then set aside.
  3. In the same pot, sauté garlic and onion until fragrant. Add carrots, celery, mushrooms, and potatoes; cook until slightly softened.
  4. Stir in remaining butter and flour to create a roux. Gradually add beef broth until smooth; incorporate seared beef, tomato paste, soy sauce, and Worcestershire sauce.
  5. Simmer uncovered for about 10 minutes until veggies are tender and flavors meld.
