- 600 g boneless, skinless chicken breast or thigh
- 1 tsp sweet paprika
- 1 tsp garlic powder
- 0.5 tsp sea salt flakes
- 0.5 tsp cracked black pepper
- 1 egg
- 0.5 cup cornflour (cornstarch)
- 1 tsp freshly minced garlic
- 1 tsp freshly minced ginger
- 0.5 cup sweet chilli sauce
- 0.25 cup tamari or soy sauce
- 0.25 cup rice apple vinegar, plain white vinegar, apple cider vinegar or lime juice
- Steamed rice
- 1 spring onion (scallion), finely sliced
- 1 tsp sesame seeds
Instructions
- Cut chicken into bite-sized pieces and season with sweet paprika, garlic powder, salt, and pepper.
- Beat the egg in a bowl; on a plate, spread cornflour (cornstarch). Dip each chicken piece in the egg then coat it with cornflour.
- Heat oil in a pan over medium-high heat and fry the chicken until golden brown and crispy, about 4-5 minutes per side.
- In another bowl, mix minced garlic, ginger, sweet chili sauce, tamari (or soy sauce), and vinegar (or lime juice).
- Pour the sauce over cooked chicken in the pan and toss to coat evenly.
- Serve hot over steamed rice, garnished with sliced spring onions and sesame seeds.
