- 2 medium shallots (diced)
- 1 medium fennel bulb (sliced)
- 5 cloves garlic (sliced)
- 1/2 teaspoon crushed hot red pepper flakes (optional)
- 1 cup dry white grape juice
- 2 28-ounce cans plum tomatoes
- 1 1/4 cups clam juice
- 3/4 pound calamari
- 3/4 pound cod or other meaty white fish
- 12 pieces little neck clams
- 1 pound mussels
- 3/4 pound extra large shrimp
- Salt and pepper to taste
- 1/4 cup minced flat-leaf Italian parsley
Instructions
- In a large Dutch oven, heat olive oil over medium-low heat. Add shallots and fennel; sauté for about 5 minutes until softened.
- Stir in garlic and cook for another 2 minutes until fragrant. Add crushed red pepper flakes if desired.
- Pour in grape juice and increase heat to medium-high, scraping any brown bits from the pot. Cook for about 90 seconds.
- Reduce heat to medium; add plum tomatoes and clam juice. Simmer for about 10 minutes.
- Incorporate calamari into the pot and cook for about 15 minutes.
- Add cod chunks, cooking for an additional 5 minutes.
- Toss in scrubbed clams and cover; cook until they start to open—about 5 to 7 minutes.
- Finally, add mussels and shrimp; cover again until shrimp is pink and mussels are opened—another 5 to 7 minutes.
- Discard any unopened shells, season with salt and pepper, stir in parsley, then serve with toasted Italian bread.
