- 2–3 chicken breasts (about 1.5 pounds)
- 1 packet chicken taco seasoning (1/4 cup)
- 2 (10oz) cans Rotel diced tomatoes & green chilies
- 1 (15oz) can black beans (drained & rinsed)
- 1 (15oz) can whole kernel corn (drained)
- 3 cups chicken broth
- 2 cups shredded cheddar cheese
- 3/4 cup heavy cream
Instructions
- Place the chicken breasts in the bottom of your slow cooker and sprinkle with taco seasoning.
- Add the Rotel diced tomatoes & green chilies, black beans, and corn on top.
- Pour in the chicken broth and cook on LOW for 4-6 hours or HIGH for 2-3 hours.
- Once cooked, shred the chicken using two forks and return it to the pot.
- Stir in the heavy cream and shredded cheddar cheese, cooking for an additional 30 minutes until melted.
- Serve hot with your favorite toppings.
