  • 1 cup pumpkin puree
  • 1/2 cup coconut oil, melted
  • 2 eggs
  • 1/3 cup maple syrup
  • 1 tsp vanilla extract
  • 2 cups oat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp pumpkin pie spice

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners lightly sprayed with nonstick spray.
  2. In a large bowl, whisk together the pumpkin puree, melted coconut oil, eggs, maple syrup, and vanilla extract until combined.
  3. In another bowl, mix the oat flour, baking powder, baking soda, salt, and pumpkin pie spice.
  4. Gradually add the dry mixture to the wet mixture and stir gently until just combined. If using chocolate chips or nuts, fold them in at this stage.
  5. Scoop the batter into the prepared muffin tin and fill each liner about two-thirds full. Bake for about 22 minutes or until a toothpick comes out clean when inserted into the center of a muffin.
