  • 1/2 Onion (chopped)
  • 1 cup Mushrooms (sliced thin)
  • 2 tbsp Butter (unsalted)
  • 2 tsp Garlic (minced)
  • 6 cups Chicken Broth
  • 3 cups Raw Spinach
  • 1 can Palmini Lasagna Noodles (drained and rinsed)

Instructions

  1. In a pot over medium-high heat, brown the ground beef with onion and mushrooms until softened. Drain any excess grease.
  2. Lower the heat to medium and add butter and garlic; sauté for about 30 seconds.
  3. Pour in chicken broth and season with salt and pepper.
  4. Cut the Palmini noodles into smaller pieces and add them to the pot; bring to a low boil.
  5. Stir in spinach until wilted.
  6. Reduce heat to medium-low; mix in heavy whipping cream and simmer for an additional 10 minutes.
