  • Leftover meat and bones from a 10-15 pound turkey
  • 3 large carrots (peeled and roughly chopped)
  • 3 stalks celery (cut into chunks)
  • 1 small yellow onion (cut into chunks)
  • 34 cloves garlic (smashed)
  • 1 small bunch of fresh thyme
  • 2 sprigs fresh rosemary
  • 3 fresh sage leaves
  • 23 bay leaves
  • 1 teaspoon whole peppercorns
  • 2 teaspoons kosher salt (more to taste)
  • 810 cups water

Instructions

  1. Place turkey meat, bones, vegetables, herbs, and spices in a large stock pot.
  2. Cover ingredients with water.
  3. Bring to a boil over medium-high heat; then reduce heat to low and cover.
  4. Let simmer for at least 1 hour (up to 6 hours for richer flavor).
  5. Taste and adjust seasoning as needed.
  6. Strain through a fine-mesh sieve into storage containers.
