- 2–3 boneless skinless chicken breasts (or thighs)
- 2 medium sweet potatoes (peeled and cubed)
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (15 oz) kidney beans, rinsed and drained
- 1 can (14 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 2 cups chicken broth
- 1 medium onion (diced)
- 3 cloves garlic (minced)
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- ½ tsp cayenne pepper (optional, for heat)
- 1 cup frozen or fresh corn
- 1 diced bell pepper
- 1–2 diced jalapeños (for added heat)
- Lime juice (for serving)
Instructions
- Prep the ingredients by peeling and cubing the sweet potatoes, dicing the onion, and mincing the garlic.
- In your slow cooker, layer the chicken at the bottom, followed by sweet potatoes, beans, tomatoes, tomato sauce, broth, onion, garlic, and spices.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through.
- About 30 minutes before serving, shred the chicken using two forks and return it to the slow cooker.
- Stir in corn and bell pepper; continue cooking for an additional 30 minutes.
