  • 1 large Egg
  • 3 ounces Cream Cheese (for dough)
  • 1 tsp Baking Powder
  • 3 tbsp Swerve Confectioner's Sugar Substitute
  • 2 cups Shredded Mozzarella Cheese
  • 1/4 tsp Xanthan Gum
  • 1 tsp Vanilla Extract
  • 1/3 cup Pumpkin Puree
  • 1/2 tsp Pumpkin Pie Spice

Instructions

  1. Melt the cream cheese and mozzarella in a microwave-safe bowl until fully melted, stirring every 30 seconds.
  2. In a mixing bowl, combine the melted cheese with the almond flour, egg, baking powder, sugar substitute, xanthan gum, and vanilla. Knead until smooth.
  3. Chill the dough in the freezer for about 30 minutes.
  4. While chilling, mix the filling ingredients (pumpkin puree, cream cheese, pumpkin pie spice) until smooth.
  5. Roll out the chilled dough between parchment paper to about â…› inch thick and cut into triangles.
  6. Spread filling on each triangle and roll from the thickest part downwards.
  7. Place on a parchment-lined baking sheet and bake at 350°F for 13-15 minutes until golden brown.
