- 1 medium yellow onion (diced)
- 2 cloves garlic (minced)
- ½ lb carrots (sliced)
- ½ bunch celery (sliced)
- 1 lb chicken breast (boneless, skinless)
- 6 cups water
- 1 cup wild rice mix
- 2 Tbsp butter
- 2 Tbsp all-purpose flour
- 2 cups whole milk
- Fresh parsley (for garnish)
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Sauté diced onion and garlic until soft.
- Add sliced carrots and celery; cook for another 5 minutes.
- Stir in chicken breast, bay leaf, oregano, thyme, black pepper, wild rice mix, and water. Bring to a boil then reduce heat to simmer for about 45 minutes until chicken is cooked through.
