  • 1 Tbsp olive oil
  • 1 medium yellow onion (diced)
  • 2 cloves garlic (minced)
  • ½ lb carrots (sliced)
  • ½ bunch celery (sliced)
  • 1 lb chicken breast (boneless, skinless)
  • 6 cups water
  • 1 cup wild rice mix
  • 2 Tbsp butter
  • 2 Tbsp all-purpose flour
  • 2 cups whole milk
  • Fresh parsley (for garnish)
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté diced onion and garlic until soft.
  2. Add sliced carrots and celery; cook for another 5 minutes.
  3. Stir in chicken breast, bay leaf, oregano, thyme, black pepper, wild rice mix, and water. Bring to a boil then reduce heat to simmer for about 45 minutes until chicken is cooked through.
  4. Remove chicken from pot, shred it into pieces, and return to soup.
  5. In a separate saucepan over low heat, melt butter and whisk in flour until smooth. Gradually add whole milk while stirring until thickened.
  6. Combine the creamy mixture with the soup and season with salt as needed. Let it simmer for an additional 10 minutes before serving.
