- 6–7 large carrots, trimmed and scrubbed
- 4 beets, scrubbed
- 2 tbsp coconut oil, melted (or olive oil)
- 2 tbsp fresh thyme
- 1 ounce goat cheese
- 2 cups fresh arugula (optional)
- 1/2 cup balsamic vinegar
- 2 tsp brown sugar
Instructions
