Ingredients

  • 67 large carrots, trimmed and scrubbed
  • 4 beets, scrubbed
  • 2 tbsp coconut oil, melted (or olive oil)
  • 2 tbsp fresh thyme
  • 1 ounce goat cheese
  • 2 cups fresh arugula (optional)
  • 1/2 cup balsamic vinegar
  • 2 tsp brown sugar

Instructions

  1. Preheat the oven to 400°F.
  2. Coat the carrots in melted coconut oil and arrange them in a baking pan.
  3. Wrap each beet in foil.
  4. Roast the carrots for about 35-40 minutes, adding the wrapped beets alongside after 20 minutes.
  5. Prepare the balsamic glaze by simmering balsamic vinegar and brown sugar until reduced by half.
  6. After roasting, slice the vegetables and toss them with fresh thyme.
  7. Serve warm with arugula, crumbled goat cheese, and balsamic glaze.
