  • 3/4 cup + 2 tablespoons unsweetened almond milk
  • 1/2 teaspoon kosher salt
  • 1 medium poblano pepper, cut into chunks
  • 2 teaspoons garlic, minced
  • 1 tablespoon lime juice
  • 1 tablespoon vegan butter
  • 1 (14oz) can jackfruit, drained
  • 1/2 cup sweet yellow onion, diced
  • 1 tablespoon garlic, minced
  • 1/2 teaspoon lemon pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/8 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper
  • Tortillas of choice
  • Optional toppings: avocado, red onion, fresh cilantro, and lime wedges

Instructions

  1. Prepare the Sauce: Soak 1 cup of raw cashews in boiling water for 15-30 minutes. Drain and blend with 3/4 cup almond milk, 1 poblano pepper (chunked), 2 teaspoons minced garlic, 1 tablespoon lime juice, and 1/2 teaspoon kosher salt until smooth.
  2. Cook the Filling: In a skillet over medium heat, melt vegan butter. Sauté 1/2 cup diced sweet yellow onion until translucent, then add 1 tablespoon minced garlic and 1 can drained jackfruit. Shred jackfruit gently while cooking; season with lemon pepper, garlic powder, paprika, kosher salt, and black pepper.
  3. Assemble Tacos: Warm tortillas briefly on a skillet. Fill each tortilla with the jackfruit mixture and drizzle the creamy poblano sauce over the top. Add optional toppings like sliced avocado, red onion, fresh cilantro, and lime wedges.
