  • 1/4 cup extra virgin olive oil
  • 2 teaspoons honey
  • 1 tablespoon dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt (or to taste)
  • 1/4 teaspoon ground white pepper (can be subbed to black, or to taste)
  • 2 lb sirloin or rib-eye steak
  • 6 cups chopped romaine lettuce
  • 2 vine tomatoes (diced)
  • 1/2 medium red onion (sliced)
  • 8-ounce blue cheese (crumbled)
  • 1/2 cup Kalamata olives (divided into 4)

Instructions

  1. Whisk together the marinade/dressing ingredients: apple cider vinegar, olive oil, honey, dijon mustard, garlic powder, salt, and pepper in a bowl.
  2. Place the steak in a shallow dish and pour one-third of the marinade over it. Massage into the meat and let marinate for 15 minutes.
  3. While the steak marinates, chop the veggies: dice tomatoes, slice onion, and chop romaine lettuce.
  4. Heat a grill or heavy-bottom pan over medium-high heat. Cook marinated steak for about 5 minutes for medium-rare; adjust time based on thickness.
  5. Allow the cooked steak to rest for a few minutes before slicing.
  6. In a large bowl, combine lettuce, tomatoes, onions, and sliced steak. Drizzle with remaining marinade and toss gently.
  7. Top with crumbled blue cheese and serve.
