Ingredients

  • 3 lb sweet potatoes, peeled and diced
  • 2 cups apple cider
  • 2 tablespoons butter
  • ¼ cup sour cream
  • 1 teaspoon kosher salt
  • 1 stick cinnamon
  • freshly ground black pepper, to taste
  • crispy onion strings, for garnish
  • fresh parsley, for serving

Instructions

  1. In a large pot, combine diced sweet potatoes, 1½ cups apple cider, kosher salt, and a cinnamon stick. Add enough water to cover the potatoes.
  2. Bring to a boil over medium-high heat. Reduce heat and simmer for 20-30 minutes until tender.
  3. Drain the sweet potatoes and return them to the pot. Discard the cinnamon stick. Mash until smooth.
  4. Stir in remaining apple cider, butter, sour cream, salt, and pepper until creamy.
  5. Transfer to a serving dish and top with crispy onion strings and chopped parsley.
  6. Serve warm.
