- 3 lb sweet potatoes, peeled and diced
- 2 cups apple cider
- 2 tablespoons butter
- ¼ cup sour cream
- 1 teaspoon kosher salt
- 1 stick cinnamon
- freshly ground black pepper, to taste
- crispy onion strings, for garnish
- fresh parsley, for serving
Instructions
- In a large pot, combine diced sweet potatoes, 1½ cups apple cider, kosher salt, and a cinnamon stick. Add enough water to cover the potatoes.
- Bring to a boil over medium-high heat. Reduce heat and simmer for 20-30 minutes until tender.
- Drain the sweet potatoes and return them to the pot. Discard the cinnamon stick. Mash until smooth.
- Stir in remaining apple cider, butter, sour cream, salt, and pepper until creamy.
- Transfer to a serving dish and top with crispy onion strings and chopped parsley.
- Serve warm.
