Ingredients

Scale
  • 2-lb flank steak
  • 1 large red onion
  • 1/3 cup olive oil
  • 1 loaf of focaccia or crusty baguette
  • 1 ripe avocado
  • Fresh parsley
  • Fresh oregano
  • Garlic
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 tsp grass-fed butter
  • Vinegar

Instructions

  1. Let the flank steak come to room temperature, then season with salt and pepper. Rub half of the olive oil on the steak.
  2. Heat a non-stick skillet over medium-high heat and sear the steak for about 3-4 minutes on each side until cooked to your liking. Let it rest before slicing.
  3. Slice the onion into thick rounds and cook in another skillet with butter and the remaining olive oil over medium heat until caramelized (about 25 minutes).
  4. In a food processor, blend avocado, parsley, oregano, garlic, vinegar, salt, pepper, and olive oil until smooth to create chimichurri.
  5. Assemble by layering sliced steak and caramelized onions on bread, then drizzle with chimichurri before serving.
