  • 3 large sweet potatoes
  • 2 tablespoons olive oil
  • 1/4 cup cheddar cheese (shredded)
  • 6 large eggs
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon kosher salt
  • Chopped chives (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Prick the sweet potatoes with a fork and coat lightly with olive oil. Bake for 45-60 minutes until fork-tender.
  2. Remove from the oven and allow to cool slightly. Cut each potato in half lengthwise and fluff the insides gently with a fork. Season with salt and pepper and sprinkle half the cheese inside.
  3. Crack an egg into each potato half and top with remaining cheese.
  4. Return to the oven for about 15 minutes until egg whites are set but yolks remain runny.
  5. Garnish with chopped chives before serving.
