  • 1 tablespoon olive oil
  • 1 tablespoon taco seasoning
  • 1 cup cooked rice (brown or white)
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1/2 cup shredded cheddar cheese
  • Lime wedges for serving

Instructions

  1. In a large skillet over medium heat, heat olive oil. Add ground turkey and cook until browned.
  2. Sprinkle taco seasoning over cooked turkey and mix well.
