- 16 oz Ground Chicken
- 2 tbsp olive oil
- 2 tbsp chopped parsley
- 3 tbsp Parmesan cheese
- 1 Large egg
- 1/2 tsp Garlic powder
- 1/2 tsp Onion powder
- 1 tsp Cajun seasoning
- 1 cup beef rind crumbs
- Salt and pepper to taste
- 6 oz Sliced mushrooms
- 3 cups Raw spinach
- 1 cup Heavy whipping cream
- 1/3 cup Chicken broth
- 1/4 cup Parmesan Cheese
- 2 tsp minced garlic
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine ground chicken, olive oil, parsley, Parmesan cheese, egg, garlic powder, onion powder, Cajun seasoning, beef rind crumbs, salt, and pepper. Mix until just combined. Form into 24 evenly sized meatballs.
- Heat olive oil in a skillet over medium-high heat and sauté the meatballs for 5-7 minutes until cooked through and golden brown. Remove from skillet.
- Lower heat to medium; add sliced mushrooms and sauté until tender. Then add spinach and cook until wilted.
- Stir in minced garlic; sauté for 30 seconds before whisking in heavy whipping cream and chicken broth until thickened.
- Mix in Parmesan cheese, salt, and pepper. Return meatballs to the skillet and gently coat with the sauce.
