- 1 Spaghetti Squash
- 1/2 Onion (chopped)
- 2 tbsp Butter
- 2 tbsp Garlic (minced)
- 1/2 cup Heavy Whipping Cream
- 1/4 cup Parmesan Cheese
- 3 cups Raw Spinach
- 1 ounce Crumbled Feta Cheese
- 1 tbsp Pine Nuts
Instructions
- Preheat the oven to 375°F. Cut the spaghetti squash in half lengthwise and place it cut side down in a baking dish filled with about an inch of water. Bake for 35–40 minutes until tender.
- After baking, let the squash cool slightly, then shred its flesh into strands using a fork.
- In a skillet over medium-high heat, melt the butter and sauté the chopped onion until tender. Add minced garlic and cook until fragrant.
- Pour in the heavy whipping cream, add spinach, and simmer until wilted. Stir in parmesan cheese and crumbled feta.
- Combine shredded squash with the filling mixture, then spoon it back into the squash halves.
- Bake for an additional 10–15 minutes before serving.
