  • 1 Spaghetti Squash
  • 1/2 Onion (chopped)
  • 2 tbsp Butter
  • 2 tbsp Garlic (minced)
  • 1/2 cup Heavy Whipping Cream
  • 1/4 cup Parmesan Cheese
  • 3 cups Raw Spinach
  • 1 ounce Crumbled Feta Cheese
  • 1 tbsp Pine Nuts

Instructions

  1. Preheat the oven to 375°F. Cut the spaghetti squash in half lengthwise and place it cut side down in a baking dish filled with about an inch of water. Bake for 35–40 minutes until tender.
  2. After baking, let the squash cool slightly, then shred its flesh into strands using a fork.
  3. In a skillet over medium-high heat, melt the butter and sauté the chopped onion until tender. Add minced garlic and cook until fragrant.
  4. Pour in the heavy whipping cream, add spinach, and simmer until wilted. Stir in parmesan cheese and crumbled feta.
  5. Combine shredded squash with the filling mixture, then spoon it back into the squash halves.
  6. Bake for an additional 10–15 minutes before serving.
