  • 1.5 lbs sweet potatoes
  • 1 tbsp olive oil
  • 1 medium yellow onion, diced
  • 1.5 lbs lean turkey meat
  • 2 tbsp tomato paste
  • 34 garlic cloves, minced
  • ½ tsp dried oregano
  • 1 tbsp smoked paprika
  • 1 cup chicken or beef broth
  • 1 cup frozen peas (or other veggies)
  • ½ tsp Italian seasoning blend
  • Sea salt and pepper, to taste

Instructions

  1. Preheat the oven to 375°F. Boil chopped sweet potatoes in water until tender (about 10 minutes). Drain and mash with salt, pepper, and Italian seasoning.
  2. In a large pan, heat olive oil over medium-high heat. Sauté diced onions for 3-4 minutes until translucent. Add minced garlic and cook for another minute.
  3. Add ground turkey to the pan and cook until browned (5-7 minutes). Stir in tomato paste, oregano, smoked paprika, salt, pepper, and broth; let simmer until thickened.
  4. Mix in peas or your choice of veggies.
  5. Spread the turkey mixture evenly in a baking dish and top with mashed sweet potatoes.
  6. Bake for 25-30 minutes until golden brown on top. Let rest before serving.
