  • 5 cups low-sodium vegetable broth
  • 2 large carrots (peeled and sliced)
  • 3 cups chopped kale leaves
  • 1 leek (sliced)
  • 2 garlic cloves (minced)
  • Fresh thyme
  • 1 bay leaf
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt (or to taste)
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sliced leek and minced garlic; sauté until fragrant.
  2. Stir in sliced carrots and whole lentils; cook for another minute.
