  • 1/4 tsp crushed chili flakes
  • 2 large carrots (peeled and sliced at a diagonal)
  • 2 large parsnips (peeled and sliced at a diagonal)
  • 1 small red onion (peeled sliced into 8 sections, leaving stem intact)
  • 2 Tbsp extra-virgin olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp freshly ground black pepper
  • 1/4 tsp dried oregano
  • 4 whole-wheat naan breads
  • 4 oz goat cheese, softened

Instructions

  1. Prepare the chili honey by mixing honey, chili flakes, and boiling water in a bowl. Let it sit for about three hours to meld the flavors.
  2. Preheat oven to 425°F (220°C). On a baking sheet, toss sliced carrots, parsnips, and red onion with olive oil, salt, pepper, and oregano. Roast for 25-30 minutes until tender.
  3. Brush naan breads with olive oil and grill until charred on both sides.
  4. Spread softened goat cheese over each naan bread, top with roasted vegetables, and drizzle with chili honey before serving.
