  • 4 cups fusilli pasta
  • 1 tablespoon olive oil
  • 3 cups corn kernels
  • 1 jalapeno (finely diced)
  • 2 tablespoons fresh cilantro (chopped)
  • 1/2 cup cotija cheese (divided)
  • 1/2 teaspoon chili powder
  • 1/2 cup Greek yogurt
  • 2 tablespoons mayonnaise
  • 3 tablespoons lime juice
  • 1/2 teaspoon coconut aminos
  • 1/4 teaspoon chili powder
  • salt to taste

Instructions

  1. Cook the fusilli pasta until al dente in boiling water. Drain and rinse under cold water.
  2. In a bowl, whisk together Greek yogurt, mayonnaise, lime juice, coconut aminos, chili powder, and salt to create the dressing.
  3. Combine cooked pasta with corn kernels, jalapeno, cilantro, and half of the cotija cheese in a large bowl. Drizzle with dressing and toss gently.
