  • 11 oz chicken or turkey kielbasa (sliced)
  • 1 medium yellow onion (diced)
  • 2 medium carrots (peeled and cut into half-moons)
  • 1 clove garlic (minced)
  • 1 tsp sweet paprika
  • 1 tsp ground cumin
  • 5 cups chicken broth
  • ¼ head savoy cabbage (cored and chopped)
  • 3 tbsp cheese spread (or plant-based alternative)
  • 12 pieces pierogi (cheese and potato filling)
  • 3 tbsp fresh dill (chopped)
  • freshly ground black pepper (to taste)

Instructions

  1. Prepare your ingredients by slicing the kielbasa, dicing the onion, chopping the cabbage, and mincing the garlic.
  2. Heat vegetable oil in a large pot over medium heat. Add sliced kielbasa and cook until browned (about 5 minutes), then remove from pot.
  3. In the same pot, sauté garlic, onion, and carrots for about 3 minutes until softened. Stir in paprika and cumin.
  4. Pour in chicken broth; bring to a boil. Add chopped cabbage, cover, reduce heat to low, and simmer for 10 minutes.
  5. Stir in cheese spread until combined. Increase heat to medium-high and add pierogi; boil until they float (3-5 minutes for fresh; up to 8 minutes for frozen).
  6. Finally, stir in kielbasa slices and fresh dill before seasoning with black pepper to taste.
