- 1 tbsp vegetable oil
- 11 oz chicken or turkey kielbasa (sliced)
- 1 medium yellow onion (diced)
- 2 medium carrots (peeled and cut into half-moons)
- 1 clove garlic (minced)
- 1 tsp sweet paprika
- 1 tsp ground cumin
- 5 cups chicken broth
- ¼ head savoy cabbage (cored and chopped)
- 3 tbsp cheese spread (or plant-based alternative)
- 12 pieces pierogi (cheese and potato filling)
- 3 tbsp fresh dill (chopped)
- freshly ground black pepper (to taste)
Instructions
- Prepare your ingredients by slicing the kielbasa, dicing the onion, chopping the cabbage, and mincing the garlic.
- Heat vegetable oil in a large pot over medium heat. Add sliced kielbasa and cook until browned (about 5 minutes), then remove from pot.
- In the same pot, sauté garlic, onion, and carrots for about 3 minutes until softened. Stir in paprika and cumin.
- Pour in chicken broth; bring to a boil. Add chopped cabbage, cover, reduce heat to low, and simmer for 10 minutes.
- Stir in cheese spread until combined. Increase heat to medium-high and add pierogi; boil until they float (3-5 minutes for fresh; up to 8 minutes for frozen).
- Finally, stir in kielbasa slices and fresh dill before seasoning with black pepper to taste.
