  • 3 yellow onions
  • 6 tablespoons salted butter
  • 1.5 pounds boneless chicken breasts or thighs
  • 2 cups sliced mushrooms
  • 1 cup dry white grape juice
  • 1 cup chicken broth
  • 2 cups dry orzo pasta
  • 0.5 cup heavy cream
  • 0.5 cup grated parmesan cheese
  • 1 cup shredded gruyere cheese

Instructions

  1. Layer the sliced onions at the bottom of the crockpot, followed by butter, chicken, thyme, sage, garlic, salt, pepper, grape juice, broth, and mushrooms.
  2. Cover and cook on low for 3-4 hours or high for 1-2 hours until chicken is tender.
  3. Preheat broiler; transfer chicken and onions to a baking sheet and broil for 3-5 minutes.
  4. Stir orzo and water into the crockpot; cover and cook for 20-30 minutes until al dente.
  5. Mix in heavy cream and parmesan just before serving.
  6. Top broiled onions with gruyere cheese and serve over the creamy orzo.
