- 4 lbs Yukon gold potatoes
- 2 1/2 teaspoons kosher salt
- 1/8 teaspoon ground black pepper
- 1/4 cup unsweetened almond milk
- 1/2 cup butter
- 1/2 cup plain Greek yogurt
- 1/2 cup + 2 tablespoons sour cream
- 1/4 cup ranch dressing
- 1 1/2 – 2 cups colby jack cheese (divided)
- 1 1/2 teaspoon garlic powder
Instructions
- Preheat oven to 350°F.
- Boil cut Yukon gold potatoes in salted water until tender (15-25 minutes). Drain and place in a large bowl.
- Add butter, almond milk, Greek yogurt, sour cream, ranch dressing, garlic powder, salt, and pepper to the potatoes. Mash until smooth.
- Fold in half of the shredded cheese and transfer to a greased baking dish. Top with remaining cheese.
- Cover with foil and bake for 15-25 minutes until heated through. Serve warm.
