  • 4 lbs Yukon gold potatoes
  • 2 1/2 teaspoons kosher salt
  • 1/8 teaspoon ground black pepper
  • 1/4 cup unsweetened almond milk
  • 1/2 cup butter
  • 1/2 cup plain Greek yogurt
  • 1/2 cup + 2 tablespoons sour cream
  • 1/4 cup ranch dressing
  • 1 1/22 cups colby jack cheese (divided)
  • 1 1/2 teaspoon garlic powder

Instructions

  1. Preheat oven to 350°F.
  2. Boil cut Yukon gold potatoes in salted water until tender (15-25 minutes). Drain and place in a large bowl.
  3. Add butter, almond milk, Greek yogurt, sour cream, ranch dressing, garlic powder, salt, and pepper to the potatoes. Mash until smooth.
  4. Fold in half of the shredded cheese and transfer to a greased baking dish. Top with remaining cheese.
  5. Cover with foil and bake for 15-25 minutes until heated through. Serve warm.
