- 1 cup strawberries (sliced)
- ½ cup blueberries
- ½ cup raw pecans
- ½ block sheep's milk feta (crumbled)
- 2 tbsp fresh parsley (chopped)
- 2 tbsp balsamic vinegar
- 1 tbsp fresh lemon juice
- 4 tbsp extra virgin olive oil
- ¼ tsp dried or fresh oregano
- pinch of salt
- Balsamic glaze (for drizzling)
- Optional: fresh lime wedges
Instructions
- Wash and dry the greens and fruits. Slice the strawberries and crumble the feta.
- Toast the pecans in a dry skillet over medium heat for 4–5 minutes until golden.
- Whisk together balsamic vinegar, olive oil, lemon juice, oregano, and salt in a bowl.
- In a large bowl, toss the spring mix with dressing until coated.
- Top with strawberries, blueberries, toasted pecans, and crumbled feta.
- Drizzle with balsamic glaze before serving.
