  • ¾ cup reduced-fat sour cream
  • 1½ tablespoons lime juice
  • 2 cans (15-ounce) no-salt-added black beans
  • ¼ cup mild salsa
  • 1½ tablespoons reduced-sodium taco seasoning mix
  • 8 corn tortillas
  • 1 cup shredded pepper Jack cheese

Instructions

  1. Prepare the chipotle crema by whisking together sour cream, lime juice, adobo sauce, garlic, and salt in a bowl. Set aside some for serving.
  2. Preheat your oven to 450°F and prepare two large baking sheets.
