  • 2 large eggs
  • 1/2 cup unsweetened applesauce
  • 1/3 cup maple syrup or honey
  • 1/3 cup almond milk
  • 2 tablespoons coconut oil
  • 1 1/2 cups all-purpose flour (or oat flour)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 cup dark chocolate chips (plus extra for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, mix the mashed sweet potato, eggs, applesauce, vanilla extract, maple syrup (or honey), almond milk, and coconut oil until well combined.
  3. In another bowl, whisk together the flour, cinnamon, nutmeg, baking powder, and baking soda.
  4. Carefully fold the dry ingredients into the wet mixture until just combined.
  5. Stir in the dark chocolate chips.
  6. Fill muffin cups with batter and top with extra chocolate chips if desired.
  7. Bake for 18-20 minutes until a toothpick comes out clean.
  8. Cool in the pan for 5-10 minutes before transferring to a wire rack.
