  • 1 1/2 pounds large shrimp (peeled and deveined)
  • 2 tbsp olive oil
  • Salt and pepper (to taste)
  • 3 tbsp butter
  • 1/2 onion (chopped)
  • 3 tsp minced garlic
  • 1 tsp basil
  • 1 pinch nutmeg
  • 1 cup heavy whipping cream
  • 1/2 cup grated Parmesan cheese (plus 1/4 cup)
  • 1 1/2 cups shredded Monterey Jack cheese
  • 1/4 cup crushed beef rind crumbs

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium-high heat. Season shrimp with salt and pepper, then sear until just cooked through.
  3. In a saucepan, melt butter over medium heat. Add chopped onions; sauté until softened. Stir in garlic, basil, and nutmeg; cook for 30 seconds.
  4. Pour in heavy cream and simmer until thickened. Mix in Parmesan and Monterey Jack cheeses until melted. Season with salt and pepper.
  5. Pour the sauce over seared shrimp in a greased baking dish. Combine remaining Parmesan with beef rind crumbs; sprinkle over the top.
  6. Bake for about 25 minutes until bubbly and golden.
