  • 2 tbsp olive oil
  • 1/2 onion (sliced)
  • 1 red bell pepper (sliced)
  • 1 green bell pepper (sliced)
  • 6 ounces sliced mushrooms
  • 1 cup crushed tomatoes
  • 1/3 cup cooking apple vinegar
  • 2 tsp minced garlic
  • 1/4 cup grated parmesan cheese
  • 1 tsp Italian seasoning

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Add sliced sausage and cook until almost done.
  3. Stir in onions and bell peppers; sauté until softened.
  4. Add mushrooms and continue cooking until tender.
  5. Drain excess grease from the skillet.
  6. Mix in garlic and Italian seasoning; sauté for 30 seconds.
  7. Pour in cooking apple vinegar and allow to simmer until absorbed.
