- 1 mashed banana
- 1 1/2 cups shredded zucchini
- 1/4 cup almond butter
- 1 egg
- 3 tbsp pure maple syrup
- 1 tsp vanilla extract
- 1 cup oats
- 1/4 cup dairy-free chocolate chips
- 1 1/2 tbsp cocoa powder
- 2 tbsp almond milk
- 1/2 tsp baking powder
- Salt
Instructions
- Preheat your oven to 350°F (175°C).
- Shred the zucchini and set aside.
- In a bowl, mash the banana until smooth.
- Mix in shredded zucchini, almond butter, egg, maple syrup, vanilla extract, and almond milk.
- In another bowl, combine oats, cocoa powder, baking powder, and salt.
- Add dry ingredients to wet mixture and stir until just combined.
- Fold in half of the chocolate chips.
- Pour into a greased 9×9 baking dish and top with remaining chocolate chips.
- Bake for about 20 minutes until set.
- Allow to cool before cutting into squares.
