- 1 head garlic (unpeeled)
- 4 lb. Red Bliss potatoes (peeled and chopped)
- Kosher salt (to taste)
- 1.5 sticks butter (melted)
- 1 cup heavy cream (warmed)
- 2 Tbsp. balsamic vinegar
- 1 Tbsp. chopped fresh parsley (for garnish)
- Extra-virgin olive oil (for drizzling)
Instructions
- Preheat oven to 400°F. Drizzle olive oil over the unpeeled garlic head and wrap it in foil. Roast for about 45 minutes until golden and soft.
