  • 4 lb. Red Bliss potatoes (peeled and chopped)
  • Kosher salt (to taste)
  • 1.5 sticks butter (melted)
  • 1 cup heavy cream (warmed)
  • 2 Tbsp. balsamic vinegar
  • 1 Tbsp. chopped fresh parsley (for garnish)
  • Extra-virgin olive oil (for drizzling)

Instructions

  1. Preheat oven to 400°F. Drizzle olive oil over the unpeeled garlic head and wrap it in foil. Roast for about 45 minutes until golden and soft.
  2. In a large pot, add chopped potatoes and cover with water, seasoning generously with salt. Bring to a boil and cook for about 30 minutes until tender. Drain well.
  3. In a mixing bowl, mash the warm potatoes until smooth. Gradually mix in melted butter and warmed cream, then squeeze in roasted garlic and balsamic vinegar. Season to taste with salt.
