  • 12 ounces pasta (spaghetti or linguine)
  • 2 tablespoons olive oil
  • 3 cups cherry tomatoes
  • 34 garlic cloves (minced)
  • 1/2 teaspoon red pepper flakes
  • 1 tablespoon balsamic vinegar
  • Kosher salt and pepper (to taste)
  • 1/4 cup fresh basil leaves (roughly chopped)

Instructions

  1. Cook the pasta in salted boiling water until al dente. Reserve ½ cup of pasta water before draining.
  2. In a large skillet, heat olive oil over medium heat. Add cherry tomatoes and cook until they begin to burst, about 8-10 minutes.
  3. Gently press tomatoes with a wooden spoon to release juices.
  4. Stir in minced garlic, red pepper flakes, salt, and pepper. Add reserved pasta water and balsamic vinegar; simmer for about 10 minutes.
  5. Remove from heat and mix in fresh basil leaves.
