- 1 lb boneless skinless chicken breasts (cut into 1-inch pieces)
- ¾ lb asparagus stalks (trimmed and cut into 1-inch lengths)
- 1 cup sliced mushrooms
- ¼ cup low-sodium chicken broth
- 2 tsp honey
- 2 tsp toasted sesame oil
- Salt and pepper to taste
- 1 tbsp vegetable oil
- 1 tsp cornstarch mixed with water
Instructions
- Heat 1 teaspoon of vegetable oil in a large pan over medium heat. Add asparagus and mushrooms; sauté for 2-3 minutes until tender. Remove from pan and keep warm.
- In the same pan, add remaining oil and season chicken with salt and pepper. Cook until browned and cooked through, about 3-4 minutes per side.
- While the chicken cooks, whisk together low-sodium chicken broth, honey, toasted sesame oil, and cornstarch mixed with water in a bowl.
- Once chicken is cooked, return vegetables to the pan along with the sauce mixture. Cook for an additional 30 seconds until heated through.
- Add cornstarch mix to thicken the sauce; bring to a boil for one minute until it coats the chicken and veggies well.
- Serve immediately, garnished with sesame seeds.
