Ingredients

Scale
  • 1 lb boneless skinless chicken breasts (cut into 1-inch pieces)
  • ¾ lb asparagus stalks (trimmed and cut into 1-inch lengths)
  • 1 cup sliced mushrooms
  • ¼ cup low-sodium chicken broth
  • 2 tsp honey
  • 2 tsp toasted sesame oil
  • Salt and pepper to taste
  • 1 tbsp vegetable oil
  • 1 tsp cornstarch mixed with water

Instructions

  1. Heat 1 teaspoon of vegetable oil in a large pan over medium heat. Add asparagus and mushrooms; sauté for 2-3 minutes until tender. Remove from pan and keep warm.
  2. In the same pan, add remaining oil and season chicken with salt and pepper. Cook until browned and cooked through, about 3-4 minutes per side.
  3. While the chicken cooks, whisk together low-sodium chicken broth, honey, toasted sesame oil, and cornstarch mixed with water in a bowl.
  4. Once chicken is cooked, return vegetables to the pan along with the sauce mixture. Cook for an additional 30 seconds until heated through.
  5. Add cornstarch mix to thicken the sauce; bring to a boil for one minute until it coats the chicken and veggies well.
  6. Serve immediately, garnished with sesame seeds.
